James Hoffmann won the 2007 World Barista Championship and founded Square Mile Coffee Roasters. This is his ultimate AeroPress technique, which was developed through experimentation and was designed to reliably produce a fantastic cup.

Steps

Place a paper filter in the cap and attach it to the brew chamber. No need to rinse the filter.

Add 11 g of ground coffee. For a light roast, it should be ground fairly fine (somewhere between a pourover and espresso grind). For a medium or dark roast, you should grind coarser.

Pour 200 g of hot water over the grounds. For a lighter roast, it should be close to boiling, but the darker the roast, the lower the temperature (as low as 85ºC for a really dark roast).

Insert the plunger at the top of the brew chamber and lift up slightly to create a seal. Let steep.

Hold the cup, brew chamber and plunger, and give it a gentle swirl.

Let sit for a little while longer.

Press gently into the cup. Keep pushing all the way through the hissing.
